Paleo livin

I have been asked by several different people about eating paleo. It is a lifestyle, not a diet. That being said, we do not eat 100% paleo 100% of the time it's more of a 70/30 split. You've got to live people!  And we don't do it to lose weight, just to stay fit and feel good. I wanted to share our favorite recipe as of late. ***WARNING*** I am not a cook. I think the longer I pretend the better I will get. Anyway, good luck following my instructions:) I found a recipe on Pinterest and had to make a few adjustments...mostly because we aren't too fond of goat cheese.... And because Stephen comes from an Italian family and great grandma, straight from Italy, put hard boiled eggs and pepperoni on her lasagna and so we do too. 

Ingredients

3-4 zucchini
3-4 hard boiled eggs
1 bag pepperoni
Parmesan cheese

Meat sauce

1 lb ground extra lean turkey or hamburger
1 medium onion, diced
1 can diced tomatoes (15oz)
4 TB tomato paste
4 TB minced garlic (give or take)
3 TB Italian seasoning
1 TB garlic salt/powder
1 tsp salt
1 tsp pepper

White sauce

2 c Greek yogurt
1 egg
1/2 c Parmesan cheese

Brown your meat. Strain it (if it needs it) and add onion. Lower heat and add paste, diced tomato and all seasonings. Set aside and mix the yogurt egg and cheese. Now slice up your zucchini and spray your pan! Lay a layer of zucchini then meat sauce then hard boiled eggs. (Don't mind mine, they are a tad over cooked!) then white sauce another layer zucchini red sauce pepperoni and if you get a wild hair, some cheese on top (had some in the fridge, but when I don't we really don't miss it) bake at 375 for 30-40 minutes. A lot of water cooks out of the zucchini so you'll need to drain it after it cooks. Good luck!
